Beautiful Day & A New Recipe

Today was a very beautiful day, 67 degrees! I was able to go for a walk/run outside at the park and drove around some neighborhoods afterwards with all my car windows rolled down letting in all the fresh air. Sometimes, I just need to drive around to get thoughts  that are swarming around in my brain organized. It seems to do the trick every time.

As one who gets sick of eating the same thing all the time, I always have to be on the lookout for new, inexpensive and healthy recipes. I definitely have not stuck to my “one new recipe a month” goal the last few months. But the other night, I came across this blog and tried these Oven Roasted Fries. THEY WERE DELISH!!!!! I’m making them again tonight for dinner. I did change the recipe a bit, so I’ll post my recipe which  is also for high altitude use. If you want the original one, here’s the link.

Oven-Roasted Fries

ngredients:
1/8 cup extra virgin olive oil
1  teaspoon minced garlic (we don’t have minced garlic, so I just chopped up some garlic)
1/2  teaspoon dried basil
1/2  teaspoon dried oregano
1/2  teaspoon dried parsley
4 large Yukon Gold potatoes (I only use 1 large potato because I slice them thin)
Sea salt and ground pepper
Cajun Seasoning

Directions:
In a large bowl, combine oil and spices (except salt, pepper and cajun seasoning). Wash the potatoes and cut into wedges, leaving the skins on.  (Thinner wedges are crispier and cook faster.)  Add wedges to the bowl and coat evenly. Arrange on a foil lined baking sheet, add salt, pepper and cajun seasoning to taste.

Roast for 20 minutes at 425 degrees, flipping the potatoes after 10 minutes to brown on both sides.

Ta da! This is one of the easiest and quickest recipes I’ve ever done. I love how I don’t have to peel the potatoes! 🙂

As I was doing my daily job search, I come across this misspelling and I had to let out a chuckle. When I first read it, my brain automatically changed it to Traffic then I realized Design and Powerpoint wouldn’t fit with “Traffic”. Oy!

Hello First 2011 Blog!

Wow. We really went on a blogging hiatus! Well, Aaron’s still on his hiatus and here I am thinking “dang, it’s time for a quick blog!”

Aaron and I went to Arapahoe Basin, known to Coloradans as A-Basin, this past Sunday with three other people. It was my first time skiing the Colorado mountains and it was Aaron’s first time skiing but his third time in the mountains. He’s been snowboarding twice. Boy, I foresee better preparation during off season by incorporating more leg workouts into my daily exercise.

The snow here is so dry which makes it very loose on the mountains so my legs had to work harder in getting the skis to handle the turns. At times I couldn’t even see my skis because they were covered under the loose snow and when it’s snowing up there all you see is white. And talk about STEEP drops.

I made a comment to Aaron after we returned, “Now I know why a whole lot more people wear helmets up there. Not too many people wear them in the East.”

On the drive back to Denver, the gang decided to stop in Idaho Springs for dinner. We ended up dining at Beau Jo’s. They serve Colorado Style Pizza. Oh.my.goodness! YUMMY! In my opinion, their pizza blows Chicago deep dish pizza out of the water. Honey wheat crust with the perfect amount of cheese, sauce and unique tasting sausage. If you come stay with us, we’ll take you there at your request even if it’s a bit of a drive. It’s SO worth it! I’m drooling just thinking about it.
